Five Awesome Gluten Free Meatloaf Recipes


I thought I would never be able to eat meatloaf again when I went gluten free. As you may know, a good meatloaf recipe requires breadcrumbs. Luckily there are several companies that now make gluten free breadcrumbs which means more meatloaf! I could have made my own gluten free breadcrumb using gluten free bread, but honestly I am just too lazy to make my own. Check out these awesome gluten free meatloaf recipes.  Bon Appétit!


Recipe 1.


PREP: 0:15
Ready In: 1 Hour


  • 2 tbsp. extra-virgin olive oil
  • 6 slices bacon, chopped
  • 1/2 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 small butternut squash, diced into 1/2″ cubes (about 1 1/2 cups)
  • 1 tbsp. thyme leaves
  • kosher salt
  • Black pepper
  • 1 1/4 lb. ground turkey
  • 3/4 c. gluten free panko breadcrumbs
  • 1/2 c. grated Parmesan
  • 1/4 c. chopped fresh parsley
  • 1 egg, beaten
  • 2 tbsp. tomato paste
  • 3 tbsp. maple syrup
  • 3 tbsp. smooth Dijon mustard
  • 3 tbsp. apple cider vinegar


  1. Preheat oven to 375° F and line a baking sheet with parchment.
  2. In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add bacon, onion, garlic, butternut squash, and thyme and cook until squash begins to soften, 6 minutes. Season with salt and pepper. Let cool slightly.
  3. In a large bowl, combine turkey, gluten free panko breadcrumbs, Parmesan, parsley, and egg with a spatula. Fold in butternut-bacon mixture, mixing until smooth. Season mixture with salt and pepper. Transfer mixture to center of baking sheet and gently press into a football shape. Season meatloaf with salt and pepper.
  4. In a small bowl, whisk together tomato paste, maple syrup, Dijon, apple cider vinegar, and remaining tablespoon of olive oil. Season with salt and pepper. Divide mixture into two bowls.
  5. Brush meatloaf with half of maple glaze. Bake until cooked through, 30 to 35 minutes and a thermometer inserted into center reads 165 degrees F.
  6. Let rest 10 minutes, then cut into thick slices and serve with a green salad. Serve with remaining maple-tomato sauce.


Recipe 2.

Ready In: 1 Hour



  • 1 1/2 pounds ground beef
  • 1 egg
  • 1 onion, chopped
  • 1 cup milk
  • 1 cup gluten free breadcrumbs
  • salt and pepper to taste
  • Morton Salt, 26 Oz
  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 1/3 cup ketchup


  1. Preheat oven to 350 ° F (175° C).
  2. In a large bowl, combine the beef, egg, onion, milk and gluten free breadcrumbs. Season with salt and pepper to taste and place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.
  3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour.


Recipe 3. Meatloaf Sandwich

Ready In: 50 Minutes



  • 1 1/4 c. ketchup
  • 1/4 c. sriracha
  • 1/2 c. chopped onion
  • 1/2 c. chopped carrots
  • 1/2 c. chopped celery
  • 3/4 c. chopped fresh parsley
  • 2 cloves garlic, roughly chopped
  • kosher salt
  • Freshly ground black pepper
  • 3/4 c. gluten free panko breadcrumbs
  • 1 large egg, beaten
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 4-6 pieces greenleaf lettuce
  • 1 large beefsteak tomato, sliced
  • 1 large red onion, sliced
  • 8 slices gluten free bread


  1. Preheat oven to 375° and line a sheet pan with parchment paper. In a small bowl, mix together ketchup and Sriracha and set aside.
  2. In the bowl of a food processor add onion, carrot, celery, parsley and garlic. Pulse until combined, then transfer to a large mixing bowl. Add salt, pepper, gluten free panko breadcrumbs and egg and mix together with a spoon. Add meat and 1/2 cup Sriracha-ketchup sauce, then mix by hand until just incorporated.
  3. Divide meatloaf into 4 equal parts. Shape each into a rectangle about 1″ high and place on parchment paper. Spread 1 tablespoon sauce on each piece using back of a spoon or a brush, then bake for 20 minutes.
  4. Assemble sandwiches by layering lettuce, tomato, onion and meatloaf between 2 pieces of gluten free bread. Serve with remaining sauce.


Recipe 4.


Total Time: 1 Hour
Prep Time: 15 minutes
Cook Time: 45 Minutes
Makes: 8 servings



  • 2cup gluten free breadcrumbs, soaked in
  • 1 cup milk
  • 1 12lbs  ground beef
  • 2 eggs, slightly beaten
  • 1cup chopped onion
  • 1 teaspoon salt
  • 1teaspoon pepper
  • 1teaspoon sage


  1. Combine meatloaf ingredients.
  2. Put in loaf pan.
  3. Top with glaze.
  4. Bake at 350° F for 45 minutes or until no longer pink in center.


Recipe 5.


Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour, 15 minutes
Makes: 4 to 6 servings


  • 1 teaspoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme leaves
  • 1/2 cup quick cooking gluten free oats
  • 1/3 cup 1% milk
  • 1/4 cup finely chopped red pepper
  • 1/4 cup finely chopped green pepper
  • 1/4 cup shredded carrot
  • 1/2 cup ketchup
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • pepper to taste
  • 1 1/2 pounds extra lean ground beef


  1. Preheat oven to 350° F. Line a baking sheet with foil and set aside.
  2. In a small pan sauté the onion, garlic and thyme in oil over medium-high heat for 5 minutes. Set aside to cool.
  3. In a large bowl combine all the ingredients, including cooled onion mixture, except the meat. When mixture is well blended add the meat by hand but do not overwork it.
  4. Place on baking sheet and shape into a 9 by 5-inch loaf. Bake for about an hour or until the center reaches 160° F. Let rest 10 minutes.
